Product description

Its generous shape and rosy colour makes this is a wonderful choice for full-flavoured presentations showcasing rice. Red Jasmine Rice is a medium grain rice that has an aromatic, popcorn-like or nutty aroma and flavour. 

Thai Green Curry amp; Red Jasmine Rice Recipe

Ingredients: 

  • 4 - 6 tbsp Thai Green Curry Paste (Maesri best) 
  • 2 large garlic cloves , minced
  • 2 tsp fresh ginger , finely grated
  • 1 tbsp lemongrass paste
  • 2 tbsp vegetable oil
  • 1 cup chicken or vegetable broth, with low sodium
  • 400 g/14oz coconut milk 
  • 1  tsp fish sauce 
  • 1 tsp white sugar 
  • 6 kaffir lime leaves (in halves)
  • 350 g/12 oz chicken thigh , skinless boneless, sliced 
  • 2 Japanese eggplants, , small, 1cm / 2/5" slices 
  • 1 1/2 cups snow peas , small, trimmed
  • 16 Thai basil leaves
  • Juice of 1/2 lime 

Directions:

  1. Heat oil in a pot or skillet over medium/high heat.
  2. Add curry paste, garlic, ginger and lemongrass. Cook for 2 to 3 minutes. 
  3. Add chicken broth and coconut milk, mix in well until the paste is dissolved. 
  4. Curry in a jar seasonings: Add 1 tsp fish sauce, and 1 tsp sugar. 
  5. Add kaffir lime leaves. 
  6. Mix well and bring to simmer.
  7. Add chicken. 
  8. Lower heat to medium so that there is a gentle bubble. Cook for about 7 minutes.
  9. Add eggplants, and cook for 5 minutes until the eggplants are soft. 
  10. Add snow peas, and cook for 2 minutes. 
  11. Stir in basil and lime juice. 
  12. Serve curry over our delicious Oragnic Jasmine Red Rice with garnishes of your choosing.
